The endless stream of invites to summer barbecues and cookouts often has me reaching for easy recipes to make in a hurry. A recipe that my kids can make virtually all on their own is a definite benefit. Like most kids, mine LOVE to help me in the kitchen and the beauty of these treats is that no matter what they look like, they will still taste good.
These are fun, sticky, sweet, and totally festive for this holiday weekend. Or any weekend for that matter! So have fun, get crazy, and COOK WITH YOUR KIDS!
Inspired by Pinterest – Yield about 36 treats
Feel free to decorate these treats with any kind of sprinkles, or leave them off entirely. Milk or semisweet chocolate can be used as well. Just do what you like!
Ritz crackers, or other round butter cracker (about 2 sleeves)
creamy peanut butter
1/2 of a 12 oz bag of good quality, dark chocolate chips
patriotic sprinkles, or color of choice (optional)
You are making sandwich cookies here friends. So take a cracker, smear on a tiny dollop (about 1 tsp) of peanut butter and set aside. Smear a tiny dollop of marshmallow fluff on the inside of a second cracker, and gently ‘sandwich’ them together. Don’t over fill your crackers or they will be crazy messy! Set the finished treats on a wax paper or parchment paper lined sheet pan and continue until you have the desired amount of crackers. Melt the chocolate in a glass bowl in the microwave on 30 second intervals until just barely melted. Stir well, and drizzle chocolate from a spoon over the crackers. Use as little or as much as you want! Immediately top with sprinkles if desired. Pan can be set in the fridge to set faster. Once chocolate has cooled, enjoy! Store in an airtight container for up to two days.
