The holiday weekend is upon us and here in the South Carolina Midlands, my family and I are looking for any and all ways to beat the heat. This super easy recipe for homemade ice cream is just what we need to keep cool!

‘Made without an ice cream maker?’
‘And its good?’
You have no idea…
Ice cream that is made without special equipment is not a new concept, but it has taken off recently and seems to be everywhere. With good reason, I might add, because it is incredibly quick, easy, and totally customizable to individual tastes. Basically a dream recipe for all parents. If you aren’t adding any extra flavors, it has only three ingredients. THREE! So yes, you can make this for friends and family, and yes you can host a quick little fourth of July ice cream social with almost no work. Perfect for gatherings this weekend, next weekend, or just a random Tuesday.
Fourth of July is a holiday that screams summer and fairly implores us to take advantage of the little things. Fireworks, barbecues, music, beaches, picnics, sparklers, and summer dresses in patriotic hues of red, white, and blue. Simple pleasures. I try to remember this and embrace the dirty toes and sticky fingers that accompany all that fun by making it easy to eat the treats alfresco! That way any drips and spills are kept outside while the kids watch the fireflies and not on my kitchen floor. Small, clear cups in a size that perfectly fits in a child’s hand make for suitable portions and easy clean-up. No fancy dishes needed!
Want to keep the toppings with the theme? Try fresh blueberries and strawberries or cherries. Red and blue sprinkles or holiday M&M colors are always fun and festive. But don’t feel you have to limit yourself! Peaches are in season and diced up and thrown on a bowl of ice cream they just might be the best summer treat ever. Make sundaes, swirl in chocolate sauce, or just stir in everything and dig in with a spoon. Because its summer, friends. Celebrate with a bowl of cold, creamy goodness and add it to the list of simple pleasures. Right next to dirty toes and sticky fingers. Easy No-Churn Ice Cream
This is a great base recipe to experiment with. The possibilities for different add ins and flavors are endless!
2 c heavy cream
1 can sweetened condensed milk
1 tsp vanilla
In a medium bowl, combine all ingredients with a hand mixer, slowly and carefully to prevent splashing and mess! You want to beat air into the mixture (this is what will make the ice cream so creamy) so as it thickens, gradually increase the speed of the mixer. When the base reaches the consistency of soft peaks-like a loose pudding-set aside the mixer and hand stir in any flavors you want to add. Pour the mixture into a bread pan, large dish, or rubbermaid type container. Bread pans work well because it is very easy to scoop out of them! Wrap with plastic wrap or cover with a lid and let freeze for at least 6 hours. Scoop and enjoy!
Need some flavor ideas to get you started?
– any kind of crushed cookies
– 1/2 tsp of mint, rum, coconut, or maple flavoring (adjust to taste)
– swirl in store-bought caramel sauce and/or chocolate fudge
– M&M’s, broken Butterfingers, toffee pieces, or chocolate chips
– any kind of fruit
– nuts or coconut
– top with your favorite breakfast cereal
– stir in 1/2 tsp of cinnamon (adjust to taste) and a drizzle each scoop with honey
– crushed vanilla wafers or graham crackers
– mini marshmallows
– preserves or jam
– don’t forget to serve it with brownies or pie
