Simple Cheddar and Swiss Fondue:: A Romantic Dinner You Can Make at Home

I love any excuse I can use to share a romantic meal with my husband. Eating out often proves expensive, though, and we don’t want to spend our Valentine’s Day or other holidays waiting for a table at a restaurant. So we have become creative about making our own romantic meals at home.

One meal that we enjoy making, which involves very little cooking time and only about 10 minutes preparation time, is cheese fondue. Sometimes I grill or bake chicken cutlets in advance to have a protein to dip in the cheese along with breads, vegetables, and apples.

I use a Cuisinart Electric Fondue pot, but any fondue pot will work for this recipe.

Simple Cheddar and Swiss Cheese Fondue

Ingredients

  • 8 oz sharp cheddar cheese
  • 6 oz swiss cheese
  • 2 tbsp flour
  • 6 oz. beer (we use a lager style)
  • 1/2 tsp minced garlic

  • First, grate and mix the cheeses together with the flour.
  • Then turn the fondue pot on (for the Cuisinart electric, the setting I use is a 4 to mix everything and then I lower to 3 while we are eating).
  • Pour the beer into the fondue pot and mix in the minced garlic.
  • Slowly add the cheese and flour mixture while stirring with a whisk.
  • The fondue should be the same consistency as honey after all the cheese is added. If the fondue is still not thick enough after adding all of the cheese, add about a tablespoon of flour. If the fondue is too thick, add a bit of beer.

Suggestions for dippers

  • Granny smith apples
  • Breads (especially rye and pumpernickel)
  • Tortilla chips
  • Chicken breast (grilled or baked)
  • Raw vegetables such as carrots, broccoli, and cauliflower
